Carotenoids found in yellow maize are located in the corn predominantly. Main carotenoids are zeaxanthin and cryptoxanthin.

Zeaxanthin contains a hydroxy function at each end group.
Zeaxanthin-glucosides and zeaxanthin-diglucosides have been found in Archaea (e.g. Sulfolobus shibatae). Due to their amphiphilic properties, it was postulated, that these carotenoids act as reinforcers in membrane architecture.
